While taking my morning stroll recently, I've been collecting some lovely ripe lemons from a huge lemon tree that hangs over someone's fence beside the sidewalk (I suppose that's not illegal - a bit like treasure trove!).

I've just squeezed enough for a couple of trays of ice cubes, but there will be more to come, and I wasn't sure how to store them. The zipper bag is great idea.

I'm looking forward to lots of healthy lemon drinks, lemon and honey, lemon and ginger and honey, ...

This was a very good tip for normal people, even though artsy fartsy bartenders prefer fresh ingredients.

I had never thought of lemon juice cubes (smacks self in head), although I always keep a lemon in the fridge on the off-chance I might need it in a recipe. Thanks for the tip. I'd also like to add that this is a great tip for a lot of different foods as well. I make vegetable stock cubes, homemade tomato sauce cubes (great for perking up store-bought sauce), pesto cubes, bean cubes, curry sauce cubes, vegetarian fake meat cubes, etc. Anything that freezes well that you might need in a small quantity can be stored this way, and it makes cooking from scratch that much easier. However, if you're going to freeze food this way, I recommend getting separtate ice cube trays.

If you have more strawberries or raspberries than you can eat, you can create berry-cubes by pureeing the fruit, adding a bit of sugar or simple syrup, and freezing into cubes. These are great in lemonade or soda water on a hot day, or you can blend them with other fruit, yogurt, juice, etc. to make smoothies.
