Supers & Landlords want all my financial information

I am currently looking for a new apartment in NYC everyone wants to know everything about my financial situation.

They request:
1. W2
2. Pay Stub
3. Tax Return
4. Letter of Employment stating: duration, salary, and position

I will most likely include a letter stating that while the person requested the information they do not have the right to make copies or disseminate it in any way.
Am I paranoid?

I wouldn't say paranoid- appropriately cautious.
If it were me, I'd black out my SSN on any documents I provided. If they want to run a credit check, I think it's fair to ask for a written copy of their policy on use of information and privacy. Bear in mind that you don't want to cause so much trouble that they don't want to rent you an apartment, but it is reasonable for them to check whether or not you're capable of paying the rent.
